Successful Time Lapse of Ribs and Filet With Spectacular Sides

While the video will fly by you in 2 minutes, that doesn’t mean you can’t take my recipes at a slower pace. Here below I have listed all the recipes used in this magnificent dinner that got rave reviews from all who attended, and even one who didn’t.

Baby Back Ribs

Ingredients:

  • 1 Rack Baby Back Pork Ribs cut in half (so that it will fit in the oven)
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 tablespoon granulated garlic
  • 1 tablespoon granulated onion
  • 1 tablespoon chili powder
  • 1 tablespoon brown sugar
  • 1/2 tablespoon kosher salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon white pepper

Preparation:

  1. Preheat oven to 300° F.
  2. Split the ribs into 2 half racks
  3. Mix spices together. Rub generously on the ribs.
  4. Wrap meat in aluminum foil making sure no part of the ribs are exposed. Place foiled ribs meat side up on a backing sheet and cook for 3 and a half hours.
  5. For grilling: with 30 minutes left, start the coals or 10 minutes left, heat up the gas grill.
  6. Once the ribs finish their 3 and a half hours in the oven, take them out of the oven and unwrap the ribs.
  7. We like our ribs dry, but if you want to use BBQ sauce, spread on your favorite BBQ sauce over the ribs before placing them on the grill.
  8. Place meat side down on the BBQ till a little bit charred (around 5 minutes) flip the ribs and char the underside (around 3 minutes).
  9. Take the ribs out of the grill. Cut the ribs apart and place on a serving platter.

BBQ Sauce

Ingredients:

  • 1 Onion, chopped
  • 2 Tbsp butter
  • 1½ c. Catsup
  • ½ c. Vinegar
  • 2 tsp. Dry mustard
  • 2 tsp. Chili powder
  • 2 tsp. Worcestershire sauce
  • 1 tsp. Tapatio
  • ½ c. Brown sugar
  • 1 tsp. Pepper

Preparation:

  1. Sauté the onion in the butter in a medium sized sauce pan. Add the remaining ingredients to the pot and simmer for 20 minutes.

Filet Mignon

Ingredients:

  • 2 lbs Filet Mignon $31.98
  • 1 Tbsp Olive Oil $0.12
  • 1 tsp Salt $0.01
  • 1 tsp Pepper $0.10
  • Total $32.21

Preparation:

  1. Let the steaks sit out in room temperature for 30 minutes to 2 hours to become room temperature
  2. Fire up the grill to high heat – 500 degrees Fahrenheit. 
  3. Drizzle olive oil on the steaks and rub it in.
  4. Sprinkle salt and pepper over the steaks and rub it in.
  5. Place the steaks on the grill. (the timing is for medium rare steaks. For more well done steaks, use indirect heat to continue to cook the steaks to your likeness after the 10 minutes of cooking on the grill is done)
  6. After 2 minutes and 30 seconds. flip the steaks
  7. After another 2 minutes and 30 seconds, flip the steaks and turn the steak 1/4 turn to make cross hatched grill marks
  8. After another 2 minutes and 30 seconds, flip the steaks one last time.
  9. After the last 2 minutes and 30 seconds, take the steaks off the grill and let rest for 10 minutes.

Mushroom Onion Steak Topping

Ingredients:

  • 1 Yellow Onion, sliced $0.17
  • 1/2 lb Mushrooms $2.00
  • 1/4 cup Butter $0.28
  • 3 Tbsp Parsley $0.13
  • 1 Tbsp Red Wine $0.07
  • 1 tsp Soy Sauce $0.03
  • 1 tsp Worchestershire $0.05
  • 1/2 tsp Salt $0.01
  • 1/2 tsp Pepper $0.05
Total $2.77

Preparation:

  1. In a skillet, over medium-low heat, melt butter.
  2. Add onions and saute stirring frequently, 3 minutes. Add mushrooms and parsley and saute until vegetables are tender, about 5 minutes longer. Add Worcestershire sauce, wine, soy sauce, salt, and pepper and saute until ingredients are blended, 2 minutes longer.

Mashed Potatoes

Ingredients:

  • Potatoes – 4 lbs $3.16
  • Butter – 2 Tbsp? $0.23
  • Milk – 1 cup? $0.27
  • Salt – 1 Tbsp? $0.06
  • Pepper – 1 tsp? $0.10
Total $3.82

Preparation:

  1. Peel the potatoes, rinse them and cut them into quarters
  2. Place the potatoes in a pot of water and boil for about 15 minutes. Poke them through with a fork to see if they are soft.
  3. Drain excess water off the potatoes.
  4. Using a mixer set on low drop in and combine the ingredients one by one: Butter, milk, salt and pepper. 
  5. Taste the potatoes to see if they are to your liking. If not, add what is missing and blend again with a mixer.

Garlic Bread

Ingredients:

  • 1 French Loaf $3.51
  • 6 Tbsp Butter $0.69
  • 4 Cloves Garlic $0.11
  • 2 Tbsp Grated Parmesan Cheese $0.15
  • 1 tsp dried Basil $0.54
Total:  $4.99

Preparation:

  1. Preheat the oven to 350°
  2. Soften the butter
  3. Crush the garlic
  4. Combine the softened butter with the garlic and parmesan cheese. Mix well
  5. Slice the loaf lengthwise
  6. Spread the butter mixture on the bread.
  7. Sprinkle the dried basil on the loaf
  8. Bake the bread for 8 minutes
  9. Turn the oven to broil and toast for up to 1 more minute
  10. Slice into 1″ thick slices.
