For years I used cooling racks to place on top of or sometimes into my baking sheets to lift up the food off of the tray surface. This worked especially well for things like frozen pizza, frozen fries, breads, rolls, chicken, or any other food that you didn’t want to get soaked by having the bottom of it sit in it’s own baking juices.
Just by chance, I happened upon these baking sheets from Amazon that come with 2 extra special improvements, a baking mat and a wire rack.
The baking mat is awesome. I use it frequently when I’m making breads like biscuits, cookies, or anything that would call for parchment paper to keep them from sticking to the pan. Works very well to keep food from sticking to the pan and saves on always buying parchment paper.
The cooling rack doubles as a wire rack that you would often get in a roasting pan. I love to use it for cooking chicken thighs, tri-tips roasts, or any meat in the oven where I don’t want the meat to marinate in it’s own juices while it cooks.
Just don’t use the baking mat underneath the wire rack as that will begin to produce holes in your baking mat. I have made that mistake and the baking mat doesn’t hold up to the wire rack.
As a special bonus, and I didn’t know this before I bought them, but the baking sheets fit perfectly in my oven side by side. It’s wonderful when I want to fill up two baking sheets with stuff and they both fit at the same level.
