You may have heard about Bobby Flay from his Food Network TV Series Beat Bobby Flay, but did you know he also shares recipes that you can use in your own home? From a recent Costco Magazine, Bobby Flay gave a recipe for a award winning cheeseburger that I have taken and modified it to my family’s tastes. See the recipe below and feel free to modify it to your own family’s desires.
Ingredients:
- ¼ cup mayonnaise
- Kosher salt
- Freshly ground black pepper
- ¼ teaspoon cayenne
- 6 oz Mexican blend cheese, grated
- ¼ cup drained, finely diced, jarred roasted red bell peppers
- 1½ pounds 80% lean ground chuck
- 2 tablespoons oil
- 4 hamburger buns, split and broiled

Preparation:
- Whisk together the mayonnaise, 1/4 teaspoon salt, 1/4 teaspoon black pepper and the cayenne in a large bowl. Add the cheese and roasted peppers, and gently fold until combined. Cover and refrigerate for at least 30 minutes.
- Heat your grill to high for direct grilling.
- Form the meat into 4 uniform, fairly flat patties, each no thicker than ¾ inch, and then make a deep depression in the center of each with your thumb.
- Brush both sides with oil and season with salt and black pepper.
- Grill until golden brown, slightly charred on both sides and cooked to medium, about 4 minutes per side.
- During the last minute of cooking, spoon about 3 tablespoons of the cheese mixture on top of each burger, close the cover and cook until the cheese has just melted, about 1 minute.
