What? You’ve never heard of nor had the best soup in the world? Well let 姥姥 (Chinese Grandma) educate you on a soup that is simple to make and full of flavor. It’s also not a soup that you will very commonly find in restaurants, so you will either need to make it at home or find a Chinese grandma to make it for you. Fortunately, I know a Chinese grandma who is an expert at making tomato egg soup (西红柿鸡蛋汤) and has shared the recipe with us.
Ingredients 食材用料 价钱:
- 2 pounds of tomatoes 4 磅西红柿
- 1 tablespoons of oil 15 毫升 油
- 1 can (6 oz) of tomato paste 245 克西红柿将
- 8 cups of stock 1.5升鸡汤
- 4 eggs 8 个鸡蛋
- 1 tablespoon of salt 45 克盐
- 2 tablespoons cornstarch 90 克淀粉

Preparation:
- Peel and chop the tomatoes into bite sized pieces. You don’t need to peel the tomatoes if you don’t mind tomato peel in your soup.
- Heat up oil in a skillet. Add tomato paste and fry it in the oil for about 1 minute. Next, add the tomatoes. Once mixed well, transfer the mixture into a large pot and cook stirring occasionally. Add 8 cups of stock and bring to a boil. Let it simmer for about 20 minutes.
- Scramble 4 eggs and drop them into the pot stirring to break them up as they get cooked in the soup.
- Take the cornstarch and add 1 tablespoon of water and mix together to get a slurry and then pour into the pot and mix it thoroughly.
