Can You Make the Best Chinese Pork Dish You Can’t Find In A Chinese Restaurant? (红烧排骨)

This dish is so good that it should be a staple in Chinese restaurants. I mean 红烧排骨 (braised pork ribs) is so good, that it is absolutely one of my favorite Chinese dishes ever. And since it is using pork ribs, the cost of the dish is not that great. Either find a Chinese Grandma who knows how to cook to make this dish for you or try out the recipe from this video.

Ingredients 食材用料 价钱:

  • 2 pounds of pork ribs cut through the bone 2 磅排骨
  • 3 stalks of green onions 3 棵青蔥
  • 5 slices of ginger 5 片姜
  • 2 tablespoons of oil 30 毫升 油
  • 5 tablespoons of granulated sugar 225 克糖
  • 8 hard boiled eggs 8 个完全煮熟的鸡蛋
  • 1 tablespoon of dark soy sauce 15 毫升 老抽
  • 1 tablespoon of salt 45 克盐
  • 2 cups stock from the boiling of pork 475 毫升 汤

Preparation:

  1. Separate the ribs by cutting through the gap. Cover the ribs in cold water and boil them.
  2. Slice the green onions into about 2 inch lengths.
  3. After boiling the ribs the first time, dump out the water and wash the ribs clean, then use cold water to cover the ribs again.
  4. Add the sliced ginger and green onions and simmer for about 30 minutes. Then take them out of the boiling water
  5. Heat up a skillet and add the oil. Place the sugar in the oil and cook till caramelized.
  6. Add the ribs and eggs into the sugared oil and stir to coat. Add the dark soy sauce and stir. Add salt and pork stock, cover and stir for about 20 minutes.
  7. Serve over rice.
