Braised Soy Sauce Trout (红烧小鳟鱼) is a great way to prepare trout, the cheap fish, that you can buy in Costco. This is a dish that my mother-in-law has often made for our family and we love it. Well, everyone but me but that’s because I generally don’t like to eat seafood, especially fish. But that doesn’t stop my family from enjoying this dish every time it gets made.

Preparation:

  1. Make diagonal slices into the trout about 1 inch apart
  2. Cut off the head and tail of the trout and cut the body into 2 inch slices and dredge in flour
  3. Chop the green onion, slice the ginger and peel and slice the garlic.
  4. In a bowl add vinegar, tofu, sweet bean sauce, sugar, salt, light soy sauce, dark soy sauce, rice wine, and mix it all together
  5. Add oil to a pan over high heat. Add Szechuan peppers and cook till black.
  6. In the mean time boil a pot of water to add to the dish in the end
  7. Fry the fish in the pan and take the peppers out. Once one side of the fish is golden brown, flip the fish over to fry the other side to golden brown. Then remove the fish.
  8. Add more oil to the pan and fry the ginger, green onions and garlic till fragrant.
  9. Add the fish back in and then add the sauce. Add the boiling water to the pan – enough to mostly cover the fish, then cover the pan and simmer for 15 minutes until the sauce is thickened.
  10. Take out and serve
