Cherry preserves for cooking a dinner? Yes, it’s true. The tart flavor of the cherry paired with a red wine transform the pork fat into a very flavorful sauce that you will enjoy on the pork or over rice or even in potatoes. And since pork is usually a cheaper meat in the grocery stores, this dish will make an excellent addition to your cheap and tasty food repertoire.

Preparation:
- Heat oil in a large skillet over medium-high. Add pork slices; cook 2 minutes on each side. Remove pork from pan; keep warm. If using bone-in pork chops, remove the bone to use later for broth.
- Increase heat to high. Add 2 teaspoons thyme to drippings in pan; cook 30 seconds (optional). Add wine, salt, and pepper; cook 2 minutes or until liquid almost evaporates, scraping pan to loosen browned bits. Add stock and preserves; cook 8 minutes or until reduced to about 1/2 cup, stirring occasionally. Spoon cherry mixture evenly over pork; sprinkle with remaining 1 teaspoon thyme (optional).
