The Costco Rotisserie Chicken. If you’re like my family, you buy one because it is quite the bargain, but then you don’t finish the whole chicken and you are left with chicken meat which as it turns out is an awesome leftover. In this case, just take that leftover chicken, chop it up, add a few other simple ingredients and voila, you now have a delectable chicken bacon quesadilla. Great for breakfast or any other time of the day.
Ingredients:
- 2 Tomatoes $0.86
- 4 Flour Tortillas $0.40
- 2 Cups Diced Chicken $4.33
- 8 oz. Shredded Cheese $2.00
- 4 Slices Pre-cooked Bacon $0.85
- Total $8.43

Preparation:
- Chop up the pre-cooked bacon
- Peel and dice the tomatoes
- Dice up the chicken
- Shred the cheese
- Heat up a skillet to medium heat.
- Place cheese, chicken, tomato, and bacon on one half of the quesadilla
- Fold over the tortilla in half.
- Heat the tortilla on one side for about 1-2 minutes till toasted and crispy
- Flip over the tortilla to heat the other side for about 1-2 minutes ‘til toasted and crispy.
- Set the quesadilla aside and let cool for about 2 minutes.
- Slice the quesadilla and serve with your favorite salsa.
