Before rotisserie chicken from Costco was a thing, you could quickly and easily make a chicken quesadilla with canned chicken. But since buying a rotisserie chicken from Costco is cheaper than canned chicken, I would improve my quesadilla with Costco chicken. But if you’re not a member of Costco, you can always buy the canned chicken in a grocery store. I might recommend a rotisserie chicken from a grocery store, but they are usually not cheap.
Ingredients:
- Tortilla $0.20
- Cheese $0.67
- Canned Chicken $1.69
- Salsa $0.31

Preparation:
- Grate the cheese
- Heat up the skillet to a medium low heat – no oil.
- Place the cheese and chicken on half of the tortilla and fold it over.
- Place the filled tortilla on the skillet and cook for about 1 minute. Use a spatula to check the doneness.
- Once golden brown to your liking, flip over the tortilla to toast the other side.
- Once both sides are golden brown to your liking, Take the quesadilla off the heat and let rest for 1 to 2 minutes.
- Slice (or not) with a knife
- Place quesadilla in the salsa and enjoy.
