If you’re like my family, you buy one because it is quite the bargain, but then you don’t finish the whole chicken and you are left with chicken meat which as it turns out is an awesome leftover. In this case, just take that leftover chicken, chop it up, add a few other simple ingredients and voila, you now have a spectacular tasting Chicken Shawarma bowl. If you’d rather have it in a wrap, then just place the same ingredients in a tortilla. Once you have mastered the Costco Rotisserie Chicken cheat code, there is no stopping the amount of chicken dishes you can make.
Ingredients:
- 12 oz. Rotisserie Chicken Breast Meat $7.79
- 2 tsp Olive Oil $0.08
- 1 tsp Salt $0.03
- 1/2 tsp Cumin $0.06
- 1/8 tsp Paprika $0.01
- 1/2 cup Greek Yogurt $0.60
- 1 Tbsp Fresh Lemon Juice $0.17
- 1 Tbsp Tahini $0.19
- 1 tsp Garlic, crushed $0.06
- 2 Cups of Calrose or Brown Rice $1.80
- 2 Cups Persian Cucumbers, chopped $0.33
- 2 Cups Halved Cherry Tomatoes $2.99
- One 15 oz. Can Garbanzo Beans $1.19

Preparation:
- Place chicken and oil in a large bowl; toss to coat. Combine 1/2 teaspoon salt, 1/4 teaspoon cumin, and paprika in a bowl. Add spice mixture to chicken mixture; toss to coat.
- Combine remaining 1/4 teaspoon salt, remaining 1/4 teaspoon cumin, yogurt, lemon juice, tahini, and garlic in a small bowl. Set aside.
- Cook rice according to package directions (or watch my pressure cooked rice recipe: https://www.youtube.com/watch?v=uCEfC-2r_TQ) . Place 1/2 cup rice in each of 4 bowls. Top each serving with about 3/4 cup chicken mixture, 1/2 cup cucumber, 1/2 cup tomatoes, about 1/3 cup chickpeas, and 2 1/2 tablespoons Greek yogurt mixture.
