🔴Chicken Thighs, Stuffing, Biscuits, Salad and Watermelon

From my first live stream making a very crispy skinned slow roasted chicken thighs, stuffing with juices from the chicken, homemade biscuits, and adding a simple salad and cutting up some watermelon. Unlike TV Shows that edit and cut to give the viewer no sense of the timing it takes to cook a meal, this stream will show you how to plan a complete meal while showing how long it truly takes to cook a dinner.

Slow Roasted Crispy Skin Chicken Thighs

Ingredients:

  • 6 Bone-In Skin-On Chicken Thighs
  • 2 Tbsp Olive Oil
  • 2 tsp Kosher Salt
  • 2 tsp Pepper
  • 4 Cloves of Garlic, Crushed

Preparation:

  1. Pre-Heat Your Oven to 300° degrees F
  2. In a small bowl mix together the olive oil, salt, pepper and garlic. Add the chicken thighs and rub the seasoning all around to coat every part of the chicken thighs.
  3. Arrange the thighs in a roasting or baking pan in a single layer, skin side up (it is ok if they are touching).
  4. Put your pan on the middle rack in the pre-heated oven.
  5. Slow roast at 300° F for 45 minutes.
  6. After 45 minutes raise your oven temperature to 425° F.
  7. Bake an additional 15 minutes, until the skin is a deep golden brown and a thermometer next to the bone reads 165°F.
  8. Take out and serve

Tastes-Like-It-Was-in-the-Bird Stuffing

Ingredients:

  • Mrs. Cubbison’s Seasoned Traditional Stuffing
  • Juice from 5 Cooked Chicken Thighs (about 1.5 cups)
  • 1 Egg
  • 1 1/2 Cups Celery
  • 1/2  Onion, Chopped
  • 1 Cup Butter

Preparation:

  1. Preheat the oven to 350°F.
  2. Saute onions and celery in butter
  3. Combine dressing with butter and sauted vegetables.
  4. Stir juice from cooked thighs in gradually.
  5. Spoon into 2 1/2- or 3-quart greased casserole dish and cover.
  6. Bake on middle rack of preheated 350°F oven for 40 minutes until internal temperature reaches 165°F.
  7. Remove cover and bake 5 to 10 minutes longer for a crisper top.
  8. Take out and serve.

Best Tasting Homemade Biscuits

Ingredients:

  • 2 Cups Flour + more to keep from sticking
  • 1 Tbsp Granular Sugar
  • 1 Tbsp Baking Powder
  • 1 tsp Salt
  • 6 Tbsp Butter
  • 3/4 Cup Milk

Preparation:

  1. Preheat Oven to 425°, Add a piece of parchment paper to a baking pan
  2. Add the flour, sugar, baking powder, and salt to a mixing bowl and mix thoroughly
  3. Grate the butter and mix in till little small pebbles of butter covered in flour forms
  4. Add milk and stir still combined and sticky
  5. On a floured board, roll out the dough
  6. Fold the dough in half 4 times making a 1/4 turn of the dough between each fold
  7. Cut out the biscuits with a cookie cutter and place them in the parchment paper lined baking pan
  8. Refold the unused dough a couple of times and cut more biscuits.
  9. Place the pan of biscuits into the oven for 12-14 minutes or until golden brown to your liking
  10. Take out and serve
