From my first live stream making a very crispy skinned slow roasted chicken thighs, stuffing with juices from the chicken, homemade biscuits, and adding a simple salad and cutting up some watermelon. Unlike TV Shows that edit and cut to give the viewer no sense of the timing it takes to cook a meal, this stream will show you how to plan a complete meal while showing how long it truly takes to cook a dinner.
Slow Roasted Crispy Skin Chicken Thighs
Ingredients:
- 6 Bone-In Skin-On Chicken Thighs
- 2 Tbsp Olive Oil
- 2 tsp Kosher Salt
- 2 tsp Pepper
- 4 Cloves of Garlic, Crushed
Preparation:
- Pre-Heat Your Oven to 300° degrees F
- In a small bowl mix together the olive oil, salt, pepper and garlic. Add the chicken thighs and rub the seasoning all around to coat every part of the chicken thighs.
- Arrange the thighs in a roasting or baking pan in a single layer, skin side up (it is ok if they are touching).
- Put your pan on the middle rack in the pre-heated oven.
- Slow roast at 300° F for 45 minutes.
- After 45 minutes raise your oven temperature to 425° F.
- Bake an additional 15 minutes, until the skin is a deep golden brown and a thermometer next to the bone reads 165°F.
- Take out and serve
Tastes-Like-It-Was-in-the-Bird Stuffing
Ingredients:
- Mrs. Cubbison’s Seasoned Traditional Stuffing
- Juice from 5 Cooked Chicken Thighs (about 1.5 cups)
- 1 Egg
- 1 1/2 Cups Celery
- 1/2 Onion, Chopped
- 1 Cup Butter
Preparation:
- Preheat the oven to 350°F.
- Saute onions and celery in butter
- Combine dressing with butter and sauted vegetables.
- Stir juice from cooked thighs in gradually.
- Spoon into 2 1/2- or 3-quart greased casserole dish and cover.
- Bake on middle rack of preheated 350°F oven for 40 minutes until internal temperature reaches 165°F.
- Remove cover and bake 5 to 10 minutes longer for a crisper top.
- Take out and serve.
Best Tasting Homemade Biscuits
Ingredients:
- 2 Cups Flour + more to keep from sticking
- 1 Tbsp Granular Sugar
- 1 Tbsp Baking Powder
- 1 tsp Salt
- 6 Tbsp Butter
- 3/4 Cup Milk
Preparation:
- Preheat Oven to 425°, Add a piece of parchment paper to a baking pan
- Add the flour, sugar, baking powder, and salt to a mixing bowl and mix thoroughly
- Grate the butter and mix in till little small pebbles of butter covered in flour forms
- Add milk and stir still combined and sticky
- On a floured board, roll out the dough
- Fold the dough in half 4 times making a 1/4 turn of the dough between each fold
- Cut out the biscuits with a cookie cutter and place them in the parchment paper lined baking pan
- Refold the unused dough a couple of times and cut more biscuits.
- Place the pan of biscuits into the oven for 12-14 minutes or until golden brown to your liking
- Take out and serve
