Preparation:

  1. Place chuck roast, 1 sliced onion, 3 crushed cloved of garlic, 1 cup of chicken stock, 2 bay leaves, 1 tbsp soy sauce, 1 tbsp fish sauce, and 1 tbsp Worcestershire sauce into the pressure cooker. Pressure Cook at High Pressure for 45 minutes. Either let it naturally release the pressure or quick release.
  2. While the beef is cooking, cook the mushroom, onion, pepper topping. In a skillet, over medium-low heat, melt butter.
  3. Add bell peppers and sauté for 3 minutes. Add onions and sauté stirring frequently, 3 minutes. Add mushrooms and basil and sauté until vegetables are tender, about 3 minutes longer. Add Worcestershire sauce, wine, soy sauce, salt, and pepper and sauté until ingredients are blended, 2 minutes longer.
  4. Take the beef out of the pressure cooker and slice against the grain..
  5. Scoop out the juice in the pressure cooker into bowls as a dipping sauce. If it’s too fatty, skim off some of the fat.
  6. Toast the rolls, add cheese on top and broil the cheese so that it melts.
  7. Layer shredded beef and onion, mushroom mixture, tomatoes (and lettuce if desired) on top of the sandwich. Serve Instant Pot French Dip with savory Au Jus sauce on the side. Enjoy~
