Let Your Crock Pot Cook So That You Can Relax And Enjoy This Remarkable Beef Stew

The crock pot, the slow cooker, the essential tool for the kitchen that will slowly cook your meal to tender perfection as long as you are able to give it the time to complete its work. That’s why you can spend about 30 minutes in the morning setting up the ingredients for this beef stew and then just let it sit for 6 to 8 hours while you get on with your busy day and end up with a tasty, hearty and healthy meal when you’re ready to eat.

Ingredients:

  • 2 lbs chuck steak, cut into 1-inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • 2 tablespoons oil
  • 2 cloves garlic, minced
  • 1 cup dry red wine
  • 4 cups beef flavored broth
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 2 large carrots, cut into 1-inch pieces
  • 3 large stalks celery, cut into 1-inch pieces
  • 1 14oz can diced tomatoes

Preparation:

  1. Sprinkle the beef cubes with salt and pepper.
  2. Heat the oil in a heavy stockpot over medium-high heat until good and hot. Add the beef cubes, spacing them about an inch apart to ensure proper browning.
  3. Generously brown on all sides, working in batches until all the beef is browned. Transfer to a plate (or crock pot if using a crock pot instead) and set aside.
  4. Add the garlic to the pot and cook for a minute.
  5. Add the wine and bring to a rapid boil, scraping up the browned bits from the bottom of the pan.
  6. Return the beef to the pot along with the beef broth, spices and Worcestershire sauce. Bring to a boil, reduce the heat to low, cover and simmer for 1 hour.
  7. Add all the vegetables except tomatoes, return to a boil, cover and simmer over low heat for another 30 minutes
  8. Add tomatoes and simmer for another 25 minutes. Add salt and pepper to taste.

For the crock pot version, begin here for steps 6 – 8

  1. Add beef broth and Worcestershire sauce and heat to a boil.
  2. Once boiled, pour the sauce over the beef in the crock pot.
  3. Add all vegetables and cook on low for 6-8 hours.
