A Denver omelet is a joy to have, but dicing up the ingredients to a small size can be tricky and or time consuming. So I have taken a liking to the FullStar Vegetable Chopper to make the chopping easy and still allow the great taste of a Denver omelet.
Ingredients:
- 6 large eggs
- 3 tablespoon butter
- 12 oz smoked ham, diced
- ½ onion, diced
- 1 green bell pepper, diced
- ¼ tsp pepper
- 6 oz shredded Colby Jack cheese
- 1 pinch cayenne pepper

Preparation:
- Beat eggs in a small bowl until just combined; do not overbeat.
- Melt butter in a skillet over medium-high heat. Add ham, onion, and bell pepper; season pepper. Cook and stir until onions soften and ham begins to caramelize, about 5 minutes.
- Reduce heat to medium-low and pour in eggs. Mix briefly with a spatula while shaking the pan to ensure ingredients are evenly distributed. Quickly run the spatula along edges of omelet. Sprinkle cheese and cayenne pepper over omelet.
- Cook, shaking the pan occasionally, until top is mostly solid, about 5 minutes. Slide the omelet half way onto a plate from the skillet and fold it over.
