This Greek inspired Eggplant-Tofu dish will satisfy your meat cravings without having any meat at all.
Ingredients:
- 7 Tbsp Olive Oil $0.82
- 14 oz Package Extra Firm Tofu $1.50
- 1 Large Eggplant $1.49
- 28 oz can Whole Peeled Tomatoes $1.19
- 2 cloves of Garlic, crushed $0.06
- 1 tsp Fresh Oregano, chopped $0.26
- 1/2 tsp ground cumin $0.06
- 1/4 tsp Cinnamon $0.02
- 1/4 tsp Salt $0.01
- 1/4 tsp Red Pepper Flakes $0.04
- 3 Tbsp Feta Cheese Crumbles $1.25

- Slice tofu into 1/2 in thick slices. Slice eggplant into 1/2 inch slices. Set both aside.
- Drain and chop tomatoes and set them in a bowl. Chop the oregano. Grate the garlic. To the chopped tomatoes add the oregano, garlic, cumin, cinnamon, salt and red pepper flakes. Stir to combine the ingredients.
- Preheat broiler with an oven rack 6 inches from heat.
- Heat a large cast-iron skillet over medium-high. Add 2 tablespoons oil; swirl to coat. Add tofu; cook until browned, about 5 minutes. Remove tofu from skillet and dry on a paper towel. Add 1/4 cup oil and eggplant slices in a single layer; cook, without stirring, until browned, about 4 minutes. Flip eggplant slices; cook until tender, about 4 minutes. Remove skillet from heat.
- Top eggplant evenly with tofu. Spoon tomato mixture over eggplant and tofu. Sprinkle with feta. Broil until cheese begins to brown, about 4 minutes.
