One of America’s favorite comfort foods is the grilled cheese sandwich. Now you can toast the bread with butter and add parmesan and garlic to give your grilled cheese that extra flavor, or you can make it lighter by refusing to add any butter. But if you’re going to take away some butter flavor, you should replace it with something flavorful. In our case, I’ve added tomato and roasted red bell peppers that combine the idea of dipping your grilled cheese into a tomato soup but putting the flavors in the sandwich instead. The combination makes for an improved grilled cheese without adding the buttery grease. What also helps is being able to use an electric griddle like the Bear Electric Griddle.
Ingredients:
- 2 Slices of Bread $0.26
- 2 Slices of Tomato $0.06
- ¼ cup jarred roasted red bell peppers $1.00
- 2 oz of sliced cheese $0.32

Preparation:
- Heat up the grill
- Layer the sandwich as so: slice of bread, slice of cheese, 2 slices of tomato, ¼ cup jarred roasted bell peppers, slice of cheese, slice of bread.
- Set the sandwich in the panini grill
- Wait till you hear the cheese hit the grill (about 3 minutes) and then take it out. For a more melted cheese grill, let it sit for another 3 minutes or so.
