- 1 15oz can fresh corn kernels $0.85
- 2 Tbsp chopped fresh cilantro $0.25
- 1 Tbsp olive oil $0.12
- 2 Tbsp fresh lime juice $0.20
- 1 tsp kosher salt $0.04
- 1 large zucchini, spiralized $0.75
- 2 Tbsp light sour cream $0.25
- 2 Tbsp crumbled queso fresco cheese $0.62

Preparation:
- Spiralize the Zucchini, chop the cilantro, drain the corn and crumble the queso fresco
- Put zucchini, cilantro, corn, olive oil, lime juice, salt and sour cream in a large bowl; toss.
