Packed with Flavor, This Grilled Tomato Salad Is Surprisingly Good

Maybe you might not call this dish a salad, but with tomatoes, crotons and beans, this dish certainly gives off salad vibes. The grilled flavor along with the freshness of the basin creates a warm glow in the stomach that is hard to resist. It’s a great companion to any BBQ you have going.

Ingredients:

  • 2 pounds vine ripened tomatoes, halved $3.50
  • 6 1/2-inch Slices French bread $1.20
  • 1/4 cup olive oil, divided $0.47
  • 3 oz feta cheese, crumbled $1.25
  • 1/4 tsp kosher salt $0.01
  • 1/4 tsp black pepper $0.02
  • 1 (14.5-oz.) can unsalted cannellini beans, rinsed and drained $0.99
  • 1/2 cup fresh basil leaves, chopped $0.65
  • 2 tsp red wine vinegar $0.06

Preparation:

  1. Heat a grill to high (450°F to 550°F). Brush tomatoes and bread with 1 tablespoon oil, and place the tomatoes and bread on the  grill until charred on both sides, about 1 minute for the bread per side and about 3-4 minutes for the tomatoes per side. Let cool 5 minutes; cut larger tomatoes and bread into chunks.
  2. Combine tomatoes, beans, basil, feta, salt, pepper, vinegar, and remaining 3 tablespoons oil in a large bowl; stir to combine.
  3. Serve with the grilled bread.
