Can a Spectacular Time-Saving Meal Prep Be Both Healthy and Good?

Meal prep. Whether you love it or hate it, this meal prep recipe can last you the whole week with flavorful roasted vegetables and fish that won’t take you very long to prepare.

Ingredients:

  • 2 lbs Broccoli $1.98
  • 2 lbs Zucchini $3.91
  • 2 lbs Squash $3.11
  • 2 lbs Persian Cucumbers $3.00
  • 1 Bunch Celery $0.89
  • 4 Bell Peppers $2.24
  • 2 lbs Mushrooms $10.00
  • 2 lbs Tomatoes on the Vine $4.19
  • 2 lbs Fish filet $3.98
  • 2 Cups of Calrose or Brown Rice $1.80
  • 4 tsp Oil $0.16
  • 2 tsp salt $0.08
  • 2 tsp pepper $0.19
  • 2 Tbsp Slap Ya Mama Seasoning $0.17
Total:  $35.69

Preparation:

  1. Preheat the oven to 450 degrees
  2. Chop all the vegetables to about 1/2 inch thickness or so.
  3. Spread the vegetables out on a baking tray lines with aluminum foil
  4. Add 1 tsp of oil, 1/2 tsp of salt and 1/2 tsp of pepper to each tray of veggies and stir them around.
  5. Place in the oven for 12 minutes.
  6. Take out and let cool. Place into a container to place in the refrigerator.
  7. Turn the heat on your oven down to 375 degrees.
  8. Sprinkle Slap Ya Mama seasoning on the fish filets. Cut the fish to about 1 inch in length.
  9. Place the fish on a baking sheet lined with aluminum foil.
  10. Place the fish in the oven for about 8-10 minutes till fully cooked.
  11. Take the tray out, let the fish cool and place in a container to place in the refrigerator.
  12. Make 2 cups of rice in a rice cooker or steaming pot.
  13. Place the rice in a container and put it into the refrigerator.
Heating Up For Lunch
  1. Take a 1/4 cup and take 2 scoops of the rice into a bowl. Sprinkle some water on the rice to help keep it from being dry. 
  2. Take a 1/3 cup and take 2 scoops of fish on top of the rice in the bowl.
  3. Take 1 cup and take 2 scoops of vegetables and place them on top of the rice in a bowl.
  4. Place in the microwave to reheat for about 2 minutes.
