When we found a nutrition guide to help us eat heathier, one of the great recipes we found was this healthy take on a chicken salad sandwich. Celery always provides a crunch, but the addition of cucumbers and tomatoes adds more flavor and even more crunch to a standard favorite. Lemon/lime juice is also a great addition to boost the flavors and create a chicken salad that will become your go to recipe. For an extra flavor boost, use the meat from a Costco rotisserie chicken.
Ingredients:
- 1 lb Costco Rotisserie Chicken Breast $4.95
- 6 Stalks of celery from Costco $0.83
- Juice of 1 Lime from our tree $0.10
- A Sprinlking of Kosher Salt $0.02
- 5 Twists of a Costco Pepper Mill $0.05
- 2 Tbsp Mayonnaise $0.10
- 4 Sliced Cucumbers from Costco $1.11
- 1 Sliced Tomato from Costco $0.75
- 4 Pita/Bread/Croissant $1.66
- Total $9.57

Preparation:
- Chop up chicken breast, and slice the celery
- Combine chicken breast, celery, juice of lime, salt, pepper and mayonnaise in a bowl. Stir together with a spoon
- Slice the cucumbers, and tomatoes
- Cut open the Croissants
- Spoon the chicken mixture into the croissant and top with cucumber and tomato slices
