Hot Chicken Salad Casserole Using Costco Rotisserie Chicken

This recipe combines Costco rotisserie chicken with standard chicken salad sandwich ingredients and heats it all up to a bubbly, warm casserole dish that is sure to be a family pleaser

Ingredients:

  • 4 cups pre-cooked (Costco rotisserie) chicken
  • 2 cans cream of chicken soup
  • 1/2 cup milk
  • 2 teaspoons lemon juice
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 cups diced celery
  • 2 hardboiled eggs
  • 1 teaspoon butter or other fat for greasing the casserole dish
  • 2/3 cup slivered almonds
  • 1 cup grated pepper jack cheese
  • 1 cup crushed potato chips

Preparation:

  1. Combine all ingredients: chicken, soup, milk, lemon juice, pepper, celery, eggs and stir. Put in a greased casserole dish. Spread almonds, potato chips, and cheese on top. Cover with foil. Bake at 375 degrees for 30 minutes.
  2. Remove foil and bake 12 minutes more or until cheese is as brown as you like it.
