Cheese Drip On Your Hamburgers Got You Down? Try This Cheat Code Instead

Cheese Drip. You know, when the cheese on your cheeseburger melts too fast and falls over the edge and either gets burned or falls off down to the fire below. One you’ve just wasted some cheese and two, most people aren’t interested in blackened cheese on their cheeseburger. But there is a cheat code that will keep your cheese from falling off the burger and give you maximum cheesiness. It’s called a juicy Lucy. It works by putting the cheese inside the patty so that it cooks and melts inside the meat. A delicious treat and you’ll never have to worry about burnt cheese again.

Ingredients:

Bobby Flay Inspired Shredded Cheese Filling
  • ¼ cup mayonnaise $0.20
  • Kosher salt
  • Freshly ground black pepper
  • ¼ teaspoon cayenne $0.04
  • 6 oz extra-sharp cheddar cheese, coarsely grated $1.50
  • ¼ cup drained, finely diced, jarred roasted red bell peppers $1.00
Juicy Lucy Patty
  • Wax Paper $0.09
  • 1 pound 80% lean ground chuck $3.99
  • 2 tablespoons canola oil $0.12
  • Kosher salt $0.04
  • Freshly ground black pepper $0.10
  • 3 hamburger buns, split and toasted $1.12

Preparation:

  1. Whisk together the mayonnaise, 1/8 teaspoon salt, 1/8 teaspoon black pepper and the cayenne in a large bowl. Add the cheddar cheeses and roasted peppers, and gently fold until combined. Cover and refrigerate for at least 30 minutes.
  2. Heat your grill to high for direct grilling.
  3. Form the meat into 3 uniform balls. 
  4. Take 1 ball and split it into 2 equally sized balls and place them on wax paper. Place another piece of wax paper on top of the two balls.
  5. Flatten each ball with a frying pan, skillet, or anything with a large flat surface. Use a spoon to top one patty with about 1/3 of the cheese mixture leaving about 1/4 inch on the sides. Place the other patty on top and pinch the edges of the two patties so that there are no holes for the cheese to escape through. Repeat for the other 2 balls of meat.
  6. Brush both sides with oil and season with about 1/4 tsp of salt and 1/4 tsp of black pepper on each side.. 
  7. Grill until golden brown, slightly charred on both sides and cooked to medium, about 3 minutes per side. 
  8. Place the burgers on toasted hamburger buns. 
  9. Garnish with your favorite toppings like, Ketchup, Mayonnaise, Bacon, Lettuce, Tomato, Avocado, Mustard, those Yellow Spicy Peppers you see at In-n-Out, but don’t you dare add Pickles!
