Can This Spicy and Nutritious Dish Be Made Better at Home than a Restaurant? (宫保肉丁)

Kung Pao Pork (宫保肉丁). Maybe you’ve heard of this Chinese dish. It packs a great slightly spicy flavor with a wonderful bevy of vegetables, pork and some peanuts thrown in for good measure. It’s heaven on a plate and I have gotten a Chinese Grandma to teach you how to cook this blessed dish.

Ingredients 食材用料 价钱:

  • 1 tablespoon finely chopped ginger 45 克姜
  • 3 stalks of green onions 3 棵青蔥
  • 4 carrots, diced 4 根胡萝卜
  • 3 medium potatoes, diced 3 个土豆
  • 1 pound of pork, diced 1 磅猪肉
  • 1 tablespoon cornstarch 45 克玉米粉
  • 2 tablespoons of oil 30 毫升 油
  • 1 cup of peanuts 145 克花生
  • 2 dried peppers 2个干辣椒
  • 1 tablespoon of dark soy sauce 15 毫升 老抽
  • 1 tablespoon of salt 45 克盐

Preparation:

  1. Mince about 8 slices of ginger and 3 stalks of green onions.
  2. Peel the carrots and potatoes. Chop them into about 1/2 inch cubes.
  3. Cut the pork into 1 inch cubes, place them in a bowl and coat with the cornstarch
  4. Heat 1 tablespoon of oil in a skillet on low heat and add the raw peanuts. Fry them till nice and toasted. Set them aside in a bowl reserving the oil in the skillet.
  5. Add the carrots to the skillet and stir fry them over high heat for about 2 minutes before adding the potatoes. Then stir fry them until they are soft but firm, about 6 minutes. Remove them and set them aside
  6. Add 1 tablespoon of oil to the skillet. Crush the dried peppers and add them along with the ginger and green onion. Stir until fragrant, about 1 minute
  7. Add the pork and stir fry until the pork is cooked through, about 5 minutes. Put the carrots, potatoes and peanuts back into the skillet and mix well.
  8. Add Dark Soy Sauce and salt and mix well.
