🔴How to Make Terrific yet Inexpensive Lobster Tails

Who doesn’t want to eat lobster cooked in a most tasteful way? And would you believe that Costco had lobster tails for a relatively good price? For around $60-$70, I was able to get 9 smaller sized lobster tails that I froze in quantities of 5 and 4. I’ve already cooked the quantity of 5, so now it’s time to cook the other 4 and fortunately, I also found a delightful recipe that give better than restaurant quality lobster tails. Don’t be put off by the small amount of work that goes into cooking these beauties. The flavor is well worth the minimal amount of work you need to do.

Broiled Lobster Tails in Garlic Butter

Ingredients:

  • 1 lb Lobster Tails
  • 6 Tablespoons Butter, melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Preparation:

  1. Preheat: Preheat oven to broil (500° F) and place the oven rack 5 inches from the top heating element.
  2. Butterfly lobster tails: Using sharp kitchen shears, cut down the length of the lobster tail just before reaching the tail fin. Pull out the meat and lay it on top of the shell. If needed, use a spoon to help detach the meat from the shell. See video below to see how to do it.
  3. Make garlic butter: Combine all ingredients for the garlic butter sauce and brush on top of lobster. Thoroughly cover the meat to keep it moist and prevent it from drying out in the oven. Make extra for serving if desired.
  4. Broil: Broil until the lobster is fully cooked. It should take about 7 to 10 minutes depending on size. The meat should be firm, opaque, and white in color with an internal temperature of 140° to 145° F. Serve with lemon wedges. Enjoy!

Parmesan Crusted Zucchini

Ingredients

  • 4 zucchini , halved lengthwise
  • 2/3 cup panko breadcrumbs
  • 1/2 cup fresh grated parmesan cheese
  • ¼ cup finely chopped parsley
  • 4 cloves garlic , minced
  • 1/4 cup melted butter
  • Salt and pepper

Preparation

  1. Preheat oven to 400°F . Take out a cookie tray with a grill and place the zucchini halves, cut side up, on the grill; set aside.
  2. Mix together the breadcrumbs, parmesan cheese, parsley and garlic in a small bowl. Pour in the melted butter; season with ¾ teaspoon salt and ⅓ teaspoon pepper (or to taste). Mix the ingredients together until the breadcrumbs absorb the butter (about 40 seconds).
  3. Spoon the mixture over each zucchini half, to evenly cover. Spray the topping with a little cooking oil spray.
  4. Bake for 20 minutes in the hot oven until the crust is golden and the zucchini halves are cooked through. Broil for a further 5 minutes on medium heat to crisp the topping.
  5. Garnish with parsley and serve as a side accompaniment to any main dish.
