No Time To Cook In The Morning? Try This Healthy Yet Scrumptious Overnight Breakfast Muesli

I first found this recipe in a Good Housekeeping Magazine that was promoting Dr. Oz healthy weekly plan. After we made this for the first time, we were hooked and I need to make this healthy breakfast at least once a week for us. The creaminess and tartness blends very well with fresh berries or peaches to make a memorable meal that you make the night before and set in the refrigerator to be ready for the next day. This is absolutely one of our favorite meals.

Ingredients:

  • 1/3 C. old Coach’s Oats (You can use other brands, but Coach’s Oats truly soaks up the milk better)
  • 2 dried apricots, diced
  • 1/2 cup nonfat plain Greek yogurt
  • 1/4 cup fat free milk
  • 2 tsp. chopped nuts
  • 1/2 cup berries

Preparation:

  1. Mix oats, apricots, yogurt, milk and chopped nuts. Refrigerate overnight. Add berries before eating.
