Blueberry Topping
Ingredients:
- 12 oz Blueberries $4.00
- Zest from 1 Lemon $0.33
- 2 Tbsp Sugar $0.03
Total: $4.36
Preparation:
- In a small saucepan add all the ingredients and simmer over medium heat for 5 minutes or so until the fruit begins to break down slightly. Leave to cool before spreading on cheesecake.

Raspberry Topping
Ingredients
- 12 oz. Raspberries $5.00
- 1 Cup Sugar $0.21
- 1/2 Cup Water $0.00
- 1/2 tsp Vanilla $0.43
- 2 tsp Corn Starch $0.02
- 2 Tbsp Water $0.00
Total $5.66
Preparation
- Put 3/4 of the raspberries in a saucepan with sugar and water. Cook over medium-low heat until the mixture is at a gentle boil. Reduce the heat and add vanilla.
- In a small bowl, combine the cornstarch and water. Whisk this together until it is smooth. This prevents the cornstarch from clumping together in the sauce.
- Once the cornstarch and water are mixed, add it to the raspberry sauce. Cook and stir this mixture until it is slightly thickened – 3 to 4 minutes.
- Remove from the heat and add butter. Let the mixture cool, then add the remaining raspberries and fold in stirring gently.
