Yes, the Disney movie Ratatouille is based on a real dish and just like the movie says, it is a peasant dish. But this peasant dish is a great and flavorful way to eat vegetables. Try out this skillet version that I first saw in Cooking Lite and modified to our family’s tastes.
Ingredients:
- Two 14 oz. cans Diced Tomatos $1.50
- One 15 oz. Can Garbanzo Beans $1.19
- 2 cloves Garlic, minced $0.06
- 1 Tbsp Olive Oil $0.12
- 1 tsp Salt $0.04
- 1 Red Bell Pepper, chopped $0.79
- 1 Medium Zucchini, chopped $0.47
- 1 Squash, chopped $0.64
- 1 Chinese Eggplant, peeled and chopped $1.59
- 1 Tbsp Red Wine Vinegar $0.09
- 1/2 tsp Pepper $0.05
- 1/2 tsp Smoked Paprika $0.05

- Drain and rinse the chickpeas. Combine tomatoes and chickpeas in a bowl.
- Heat 1 tablespoon oil in a large skillet over medium-high. Add garlic, 1/2 teaspoon salt and sauté for about 1 minute until the garlic gets golden brown. Add red bell pepper, zucchini, squash and eggplant to the skillet; sauté 7 to 8 minutes or until slightly tender. Stir in tomato mixture and remaining 1/2 teaspoon salt; cover, and cook 5 minutes.
- Uncover pan; stir in vinegar, paprika, and black pepper. Cook 5 minutes or until vegetable mixture is slightly thickened. Place in a serving bowl.
