This Tuscan styled stuffed chicken thigh looks spectacular and tastes even better than it looks. With a phenomenal savory flavoring from the sun dried tomatoes and spices, this dish is certainly on the road to becoming one of your favorites.
Ingredients:
- 5 chicken thighs pounded thin $5.04
Spices for chicken
- 1 teaspoon of garlic powder $0.04
- 1 teaspoon of onion powder $0.06
- 1 teaspoon paprika $0.10
- 1 teaspoon of poultry seasoning $0.19
- 1/2 teaspoon salt $0.02
- 1/4 teaspoon pepper $0.02
- 2 tablespoons of olive oil $0.23
Filling
- 1 bunch of spinach $1.49
- 1/2 cup ricotta cheese $1.00
- 1/2 cup of parmesan cheese $0.30
- 1/4 cup sundried tomatoes in olive oil and herbs chopped $2.50
- 2 tablespoons of fresh basil chopped $0.43
- 1/2 teaspoon salt $0.02
- 1/4 teaspoon pepper $0.02

Preparation:
- Preheat the oven to 375 degrees.
- Chop the spinach, and place in a bowl adding the ricotta cheese, parmesan cheese, chopped sundried tomatoes, chopped basil and salt and pepper.
- Use a meat hammer and pound the thighs to about ¼ inch thickness (or less)
- Use 1 Tablespoon of the olive oil and coat the chicken with the oil and seasonings.
- Place the stuffing on one half of the chicken and fold the chicken over.
- Sear each side of the chicken until golden brown.
- Place in the oven and bake for 20 minutes or until cheese is bubbly and chicken is cooked until no longer pink.
