Ingredients:
- 2 Tbsp Olive Oil $0.23
- 1 Small Onion, chopped $0.17
- 10 Vine Ripened Tomatoes, roughy cut $5.24
- 2 Cloves Garlic, minced $0.06
- 4.5 Cups, chicken stock (1.5 Tbsp boullion) $0.07
- 1/4 Cup Fresh Basil, thinly sliced $0.43
- 1 tsp Salt $0.04
- 1/2 tsp Pepper $0.05
- 1/4 tsp Red Pepper Flakes $0.04
- 1 lb Pasta $2.29

Preparation:
- Peel and dice tomatoes, mince the garlic, slice the basil, and chop the onion.
- Set the pressure cooker to Sauté on Normal. Add oil till it gets hot – move the cooker around to see that the oil is free flowing.
- Sauté onion in hot oil until slightly caramelized, about 2 minutes; add tomatoes and garlic and continue to sauté for about about 2 minutes.
- Pour chicken stock into the pot; add basil, salt, black pepper, and red chili flakes; stir.
- Push pasta into the mixture with a spoon to cover in the tomato mixture.
- Select cancel on your pressure cooker.
- Lock pressure cooker lid in place. Set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 5 minutes on High pressure.
- Allow pressure to release naturally for 5 minutes, then set steam vent to Venting to quick-release remaining pressure.
- Stir mixture to break up any clumps of pasta.
