One dish that is quite popular to Chinese populations that you don’t see in the American Chinese restaurants is 西红柿炒鸡蛋 (tomato egg). It’s rather a simple dish to make and as a foreigner in China, it a great dish to have since it has an air of familiarity since the ingredients are readily found in America and taste great together. But don’t worry, the dish is quite easy to make and if you want to know what all the fuss is about, you can make it right in your own home.

Preparation:

  1. Mince about 8 slices of ginger and 3 stalks of green onions.
  2. Peel the tomatoes (it’s a Chinese thing. But if you don’t mind peel in your dish, you do not need to peel the tomatoes) and rough cut them to no more than 2 inches in length.
  3. Mix up the eggs
  4. Pour 1 tablespoon of the oil into a hot pan, pour in the eggs and scramble them and then take out the eggs
  5. Pour the rest of the oil into the same pan. Add ginger and green onion and stir fry until fragrant
  6. Add the tomatoes cook them till they have broken up and soup like.
  7. Return the eggs to the skillet of tomatoes, mix together, add salt to taste and mix thoroughly.
  8. Serve over rice.
