Ingredients:
- 2 Tbsp olive oil
- 2 cups peeled and chopped carrots (about 2)
- 1 1/4 cups chopped celery (about 2)
- 2 cloves garlic, crushed
- 4 (14.5 oz) cans low-sodium chicken broth or vegetable broth
- 2 (14.5 oz) cans diced tomatoes (undrained)
- 1 bay leaves
- 4 cups frozen vegetables

Preparation:
- Heat olive oil in a large pot over medium heat.
- Add carrots and celery and saute 3 – 4 minutes
- Add crushed garlic and saute 30 seconds longer.
- Pour in broth and add tomatoes and the bay leaf. Bring to a boil.
- Add frozen vegetables, reduce heat to medium-low, cover and simmer till flavors mix well, about 20 – 30 minutes.
