In fact, you can even show the vegetarian that the BBW is a great way to enhance the flavors of their favorite vegetables. And for the very strictest of vegetarians, you could use grills that have never been used to grill meat.

Ingredients:

  • 2 Medium Zucchinis $0.94
  • 1 Tbsp Olive Oil $0.12
  • 1/8 tsp salt $0.01
  • 1/8 tsp Pepper $0.01
  • 1 1/2 Tbsp Balsamic Vinegar $0.23
  • 2 cloves Garlic, minced $0.06
  • 4 Telera Rolls $1.60
  • 8 leaves of Basil $0.43
  • 1 Tomato, sliced $0.17
  • 8 oz. Mozarella, sliced $1.68

Preparation:

  1. Heat up the BBQ. 
  2. Slice zucchini lengthwise into 4 even slices, then cut the sliced in half. Place zucchini in a deep bowl. Add 1 tablespoon of oil and garlic; toss to coat. Sprinkle with salt and black pepper. Mix. 
  3. Arrange zucchini on the grill; cook 2 minutes on each side or until grill marks appear. Return the zucchini to the deep bowl. Drizzle with vinegar. .
  4. Toast the rolls in the broiler, toaster or grill. Top evenly with zucchini, basil, tomatoes, and mozzarella.
