- Heat up the BBQ.
- Slice zucchini lengthwise into 4 even slices, then cut the sliced in half. Place zucchini in a deep bowl. Add 1 tablespoon of oil and garlic; toss to coat. Sprinkle with salt and black pepper. Mix.
- Arrange zucchini on the grill; cook 2 minutes on each side or until grill marks appear. Return the zucchini to the deep bowl. Drizzle with vinegar. .
- Toast the rolls in the broiler, toaster or grill. Top evenly with zucchini, basil, tomatoes, and mozzarella.
